This past year has been pretty strong on the cooking front. I got inspired by a coworker of mine who is an amazing chef. Literally his food looks like art. Mine is nowhere near that, but nevertheless I’ve had some fun this year in the kitchen. I learned that I love pork chops, steak salad, and chimichurri sauce. Those dishes have also been my most successful.
Steak Arugula Salad with Chimichurri Sauce
This was my all time favorite, and probably the best dish I’ve made. The chimichurri sauce is amazing, and could literally put it on anything. I love sauces of all kinds, but this is my hands down favorite. I was mostly cooking for one, so I ended up putting multiple spins on it. I even added the chimichurri sauce on my chicken salad, and I loved it.
Egg and Avocado Toast
This is my go-to breakfast whenever I have some extra time in the morning. I recently learned a special addition from my friend in San Diego that basically ups ANY avocado toast ever – red pepper flakes. It was amazing. I had no idea little pepper flakes could make avocado toasts so much better than it already is! I’ll be forever grateful and red pepper flakes have been a staple ever since.
Pork Chops with Apple Salad and Mashed Potatoes
Ever since I went to Salt’s Cure in Los Angeles and had their amazing pork chops, I’ve been wanting to try it for myself. I brined the pork chops for over a day, and made my own apple salad. While tasty, it was a bit too salty. I’ll have to cut back on the salt next time around. But, I did very much enjoy the flavor and was fairly juicy and soft. I have to try this again!
Pineapple Fried Rice
I found this recipe online as I do all with all my cooking adventures. I pretty much make fried rice whenever I run out of food, so it’s not normally something I’d look up to make, but I randomly found this one and the pineapple was so pretty I gave it a try. Looks exactly like how it would taste!
I love tacos. That is all.
Cheddar Bacon Biscuits with Honey Butter
My best friend’s dad love biscuits. For Day of the Dead, my friend went and bought a dozen biscuits and gave me some. They were so warm and tasty, I decided to give it a try on my own. While it wasn’t as soft, it wasn’t too bad when I put it in the toaster and added some honey butter. I’m going to have to figure out how to make it softer. I made a burger out of it because I had so much left over. I wouldn’t necessarily recommend this to anyone. I ate it. It went down.
Chicken Tikka Masala
I love chicken tikka masala. I made horrible chicken tikka masala. I must have read the recipe wrong because one bite from this dish below tasted like a spoon full of salt. It was absolutely horrifying and it went straight into the trash. I was so upset because I love this dish, and to have made such bad error was disheartening. My friend bought be a bunch of Indian spices for my birthday, so I’m definitely going to have to give this a redo.
I hope to have more cooking adventures soon, but I’ve spent the last few months traveling so much that I just haven’t had the time. I hope when things calm down next year, I can start up again!
